It ain't easy bein' green.......Happy {early} St. Patrick's Day!
I was trying to think of a fun & easy dessert for St Patrick's day and yes, this will work.
Here is my recipe for Chocolate Soda Cake. I adapted this recipe from the cookbook "Baked NYC."
Chocolate Soda Cake
Makes 1 Bundt cake, make sure you grease and flour your pan correctly or the cake with stick!
preheat oven to 350 degrees
2 C root beer. or coke but for St. Patty's day substitute Guinness
1 C cocoa powder
4 oz unsalted butter
1 1/4 C sugar
1/2 C brown sugar
1 C sour cream
2 eggs
2 C all purpose flour
1 1/4 tsp baking soda
1 tsp salt
1. in a sauce pan heat together the Guinness or soda, cocoa powder and butter. when butter is melted add sugar and whisk until combined. remove from heat and cool.
2. in a small bowl whisk together the sour cream and eggs. whisk these ingredients into above cooled chocolate mixture
3. in a large mixing bowl whisk together the flour, soda soda and salt
4. gently fold in the flour mixture into the cocoa/butter mixture, it will be a bit lumpy just whisk it but don't over mix it
5. pour into your carefully prepared pan. bake for 35-40 minutes, turning halfway through baking time
6. cool and turn over taping to remove from bundt pan
Icing:
2 oz chocolate
4 oz unsalted butter
1 tsp salt
1/4 C soda or Guinness
2/3 C cocoa powder
2 1/2 C powdered sugar
1. melt chocolate and butter together and pour into food processor or blender
2. add all other ingredients and pulse until the frosting is shinny and smooth
3. pour over bundt cake slice and devour
This weekend's soups:
local chicken and brown rice
local potato and leek
